Batch Cooking Soup for Two and How Long It Really Keeps
Most soup recipes make enough for six, and two people can only eat so much leek and potato before the last tub goes fuzzy at the back of the fridge.

Most soup recipes make enough for six, and two people can only eat so much leek and potato before the last tub goes fuzzy at the back of the fridge. Halve the recipe and you lose the whole point of making soup in the first place, which is cooking once and eating well for days. Batch cooking soup for two works when you plan the portions, the storage, and the timing together, and that is what we have spent the last three winters getting right.
Here is our system: which soups to make big, how long each one really keeps, and the freezing habits that stop us throwing any of it away.
Why batch cooking soup for two beats halving the recipe
Soup is one of the few dishes that gets better when you make more. A big pot holds heat evenly, onions soften properly instead of catching, and you use whole vegetables rather than leaving half a celeriac to dry out. We tried halving soup recipes for a while, and it is one of the dishes we mention in halving recipes for two as not worth scaling down.
The money adds up too. A full pot of red lentil and carrot soup costs us about £4.20 for six generous portions, roughly 70p each. A single shop bought fresh soup is £2.50 to £3.00 for two small bowls.
Our rule now is simple. Make six portions. Eat two that night, put two in the fridge for lunch within three days, and freeze two for a night when neither of us wants to cook.
How long soup keeps in the fridge and freezer
This is where most of our waste used to happen. We would freeze everything without thinking, then find a mystery tub eight months later. These are the windows we stick to now.
| Soup type | Fridge | Freezer | Freezes well? |
|---|---|---|---|
| Lentil, split pea, bean | 4 to 5 days | 3 months | Very well |
| Blended vegetable, like squash or tomato | 3 to 4 days | 3 months | Very well |
| Chicken and vegetable | 3 days | 2 to 3 months | Well, add pasta fresh |
| Cream or milk based | 2 to 3 days | 1 month | Poorly, can split |
| Potato chunks | 3 days | Avoid | Turns grainy |
Two things make the biggest difference. Cool the soup fast, within about 90 minutes, by splitting it into shallow containers rather than leaving the pot on the hob all evening. And write the name and date on every lid with a marker. It takes ten seconds and saves the guesswork later.
The soups that work best for two
After a lot of trial, these four are on rotation from October to March. Each one makes six portions in a standard 5 litre pot.
Red lentil, carrot and cumin
300g red lentils, 4 carrots, 2 onions, 1.5 litres of stock, 2 teaspoons of cumin. Ready in 35 minutes, blends smooth, and freezes better than almost anything. This is our default.
Roasted tomato and red pepper
Roast 1kg of tomatoes and 3 peppers at 200C for 40 minutes first. It is more effort, but the soup tastes far deeper, and the same tray roasting trick works with squash.
Chicken, white bean and kale
Our heartier one. Leave the kale out of the portions you freeze and stir in fresh kale when you reheat, so it stays green rather than going grey.
Minestrone without the pasta
Cook the pasta separately, only for the bowls you are eating that day. Pasta left in soup swells overnight and turns the whole thing into stew.
Most of what goes into these comes from the cupboard. Our guide to stocking a two person pantry lists the lentils, tins and stock we always keep in.
Why we stopped freezing soup in big tubs
The usual advice is to freeze leftovers in large containers to save space. For two people, we think this is wrong. A one litre tub is too much for a single lunch and not quite right for dinner, so you defrost it, eat half, and the rest sits in the fridge until it goes off.
We now freeze in portions of 400ml, which is one big bowl. Two of those make dinner for both of us. One makes a lunch. We use freezer bags laid flat on a baking tray until frozen solid, then stand them up like files. Ten bags take up less space than three tubs, and they defrost in about 20 minutes in a bowl of warm water. There is more on this in our simple freezer habits.
Our soup day routine, step by step
We do this most Sunday afternoons in winter. It takes about 75 minutes, most of it hands off.
- Chop everything at once, before the hob goes on. Onions, carrots and celery for the base, then the main vegetable.
- Soften the base in oil for 10 minutes on medium heat. This is the step people rush, and it is where the flavour comes from.
- Add spices for one minute, then stock and the main ingredients. Simmer 25 to 35 minutes.
- Blend if needed, then taste and season. Under salted soup tastes flat after freezing, so season properly now.
- Portion straight away: two bowls for tonight, two tubs for the fridge, two bags for the freezer.
- Label, date, and get the freezer bags flat on the tray before you sit down to eat.
Making the same soup taste different
The real risk with batch cooking is boredom by day three. We keep a small set of toppings to change each bowl: a spoon of yoghurt and chilli oil on the lentil soup, grated cheese and toasted seeds on the tomato, a squeeze of lemon and crushed garlic croutons on the minestrone. Stale bread cut into cubes and baked at 180C for 10 minutes makes croutons in the time the soup takes to reheat. A topping costs pennies and makes Thursday's bowl feel like a new dinner rather than a repeat.
Reheat until it is steaming hot all the way through, and only reheat soup once. If you know you will only eat half a portion, take out what you need and leave the rest cold.
Frequently asked questions
How long does homemade soup last in the fridge?
Most homemade soup keeps 3 to 4 days in the fridge if it is cooled quickly and stored in a sealed container. Lentil and bean soups can stretch to 5 days. Cream based and chicken soups are best eaten within 3.
Can you freeze soup with potatoes in it?
You can, but chunks of potato go grainy and watery after thawing. Blended potato soups survive better than chunky ones. If you want potato in a frozen batch, add freshly boiled potato when you reheat it.
What is the best container to freeze soup for two people?
Flat freezer bags holding about 400ml each, which is one large bowl, work best for two. They freeze quickly, stack neatly, and defrost in about 20 minutes. Large tubs tend to leave half a portion that goes to waste.
